The longer you go without eating meat, the more your body adjusts to the new cuisine your eating. 

For instance, I used to look forward to a cube of beef while eating various dishes, and, after eating vegetarian food primarily for months in Montréal (I still eat meat when visiting family to avoid awkwardness), I found myself looking just as forward to cubes of potato or butternut squash, depending upon what I was eating.
